"This was our first selfie together on May 18th. We started our relationship in a bubble only to continue our engagement in a bubble. For months we couldn't be seen together. Our secret trips never felt long enough. We couldn't wait to experience life together. Real life," Katie captioned the picture.
"The simple things that many of us forget to appreciate. Like the drive to get the coffee together. Or spending time together surrounded by family. Grandma taking a pic with her iPad. Or the simplicity of walking the dogs together. Walking through the ice cream isle deciding a flavor to share."
Katie went on to list more simple things she's been enjoying with Blake -- including "holding hands during that three hour road trip" or "being a tourist in a city together" and "laughing from the spontaneous moments."
"We finally had a taste of that together during my mini trip to Canada," Katie wrote, referring to how she and Blake had visited his hometown in Toronto, Canada after publicly announcing their engagement.
"And as I fly back to Seattle, I'm already counting down the days until we can do it all over again. We knew life was going to be an adventure, but for now, I'm still soaking up the simpler things in life," she concluded.
A fan asked the Washington native in the comments, "Why aren't you moving to Canada?"
Katie -- who is moving into a new place in San Diego, CA, on September 1 -- replied, "We are experiencing both home countries together before we plant roots anywhere officially."

When another Instagram user asked when Katie and Blake will reunite again, Katie shared, "He will visit the US in a few weeks."

The pair had told Us Weekly their goal is to "jump around for a bit" observing each other's lifestyles and interests as well as learning more about each other's hometowns in order to figure out their eventual "anchor spot" and what works best for them.
Katie recently admitted she was totally shocked by Blake's marriage proposal but is so glad that he chose to commit to her at the end of her season.
"It's hard to say the impact of that in the real world, [if he didn't pop the question], because you go through so much and you want to take this very seriously -- and a proposal and engagement is very serious," Katie told Us.
"I didn't come here to find a boyfriend. I can do that on a dating app," she added. "So it's hard to say if we would have survived just as a dating couple."
Katie said her relationship with Blake is incredibly strong now that they've promised each other forever.
"The fact that we're both committed to each other as future husband and wife, it just says a lot about our confidence in our relationship," Katie said.

Now that Katie and Blake are happily engaged, the couple is already receiving questions about their wedding.

"At some point, there is certainly a wedding. There's no doubt about that," Katie acknowledged.
When Blake proposed marriage to Katie on The Bachelorette finale, he said being Katie's last man standing felt like a fairy-tale and they had a connection that initially seemed too good to be true.
"I know how great of a wife you're going to be and mother you're going to be. But I know there's things that scare you," Blake told Katie.
"I know that you in the past have talked about how you've had to compromise who you are to make relationships work, and I don't want you to do that. But I can't give you what you came her for."
"Because you deserve a lot more than that. You deserve the world, and I'm excited to support you and be there for you every day moving forward... Will you marry me?"
Katie shouted in reply, "Yes!"
